Fat (Lipid) Modifications to Purified Diets

 

We can alter the fat concentration of any purified diet; diets with high and low fat concentrations are possible. Fat levels are usually adjusted by making adjustments to the carbohydrate level or, sometimes, to the protein level of the diet. These formulas can be "calorie-balanced" or "quantity-balanced." Typically the fat in purified diets is obtained primarily from lard, although virtually always there will be some vegetable fat in order to proved essential fatty acids (EFA). Occasionally other sources of fat will be used in addition to or in place of lard: oils such as soy, corn, coconut, cottonseed, peanut, sunflower, safflower, olive; and other fats such as beef tallow, butter (anhydrous milk solids), and hydrogenated vegetable fat ("Crisco").
